HOW TO MAKE A JUNGLE CURRY WITH CHICKEN
On a recent scout night, Ajay our scout leader and his wife showed the boys how to prepare and cook a curry. Here are the ingredients and directions for cooking your own jungle curry.
INGREDIENTS: 60ml cocunut cream, 2 tablespoons of green curry paste, 350g skinless chicken thigh fillets sliced, 440ml cocunut milk, 2 and a half tablespoons fish sauce, 1 tablespoon palm sugar, 350g mixed aubergines cut into quarters, 50g galangal, 7 makrut lime leaves torn in half, a handful of thai sweet basil leaves, 1 long red chilli.
DIRECTIONS: simmer the cocunut cream in a wok/saucepan for around 5 minutes. Sir the cream and then add the curry paste to combine and cook. Add the chicken while continuing to stir. Add nearly all of the cocunut milk, fish sauce and palm sugar and then simmer over a medium heat for around another 5 minutes. Add the eggplants whilst stirring continuously until they are cooked. Add the galangal and makrut leaves. Taste and adjust accrdingly. serve in a bowl and sprinkle with remaining cocunut milk as well as basil and chilli.
How to build a simple leaf blower Hovercraft [able to lift serveral Scouts or even a Scout leader].
Material required:
- Leafblower [or a vacuum cleaner which has a blower oulet].
- Plywood, 3ft or 4ft square, 3/8in or 1/2in thick.
- Plastic sheet, 1ft larger than the plywood.
- Small plastic disk [coffee can lid, or 6" disk 1/8in thick plastic or thin wood.
- Bolt, 2in, 1/4-20.
- Nut, 1/4-20.
- Fender washer [x2].
- Duct tape.
- Razor knife [to be used under ADULT supervision].
